Through slow fermentation, the garlic transforms into soft, jet-black cloves with a sweet, umami-rich flavor reminiscent of balsamic vinegar, tamarind, and dried fruit.

Use the cloves whole or mashed into sauces, dressings, marinades, risottos, or roasted meats. A favorite of chefs and home cooks alike, black garlic adds depth and complexity to both French and Asian-inspired cuisine.
