What you’ll need:
1 whole chicken (3–4 lbs)
3 tablespoons softened butter
3 garlic cloves, minced
Fresh thyme and rosemary sprigs
1 lemon, halved
Salt and pepper
Olive oil
Quick steps:
Preheat your oven to 425°F (220°C).
Pat the chicken dry, then season generously inside and out with salt and pepper.
Mix the garlic into the softened butter, then rub it all over the chicken.
